Resveratrol is a non-flavonoid polyphenolic organic compound, which is an antitoxin produced by many plants when they are stimulated. Resveratrol has antioxidant, anti-inflammatory, anticancer and cardiovascular protective effects. It can be synthesized in grape leaves and skins and is a biologically active ingredient in wine and grape juice. Resveratrol is a colorless needle crystal, and solubles in ether, chloroform, methanol, ethanol and acetone and other organic solvents. It can fluoresce under 366mm ultraviolet light, and can react with ferric trichloride -potassium ferricyanide. The maximum absorption wavelength of trans-resveratrol is 308nm, and that of cis-resveratrol is 288mm. When the buffer solution pH is low (pH1 to 7), trans-resveratrol remaines stable for several months in light protection, while cis-resveratrol remaines stable only in light protection and near neutral buffer solution.
