Pyruvate (CH3COCOOH) is the simplest α-keto acid, with carboxylic acid and ketone functional groups.
Pyruvate can be produced from glucose by glycolysis, can be converted back to carbohydrates (such as glucose) by gluconeogenesis, or can be converted to fatty acids by reaction with acetyl-CoA. It can also be used to construct the amino acid alanine, which can be converted into ethanol or lactic acid by fermentation.
When oxygen is present (aerobic respiration), pyruvate provides energy to cells through the citric acid cycle (also known as the Krebs cycle), or ferments to produce lactic acid (lactic acid) in the absence of oxygen.
Its chemical formula is C3H4O3, and CAS number is 127-17-3.
