Elaidic acid (9-octadecenoic acid, trans-oleic acid) is a trans fatty acid commonly found in hydrogenated vegetable oils. The dangers of trans fatty acids are becoming more and more well known.
The formation mechanism of trans fatty acids also varies. The trans fatty acids in food mainly come from the fatty acids with trans structures formed during the metabolism of ruminants and during food processing. The trans fatty acids in ruminants are formed by the enzymatic hydrogenation of the hydrogenating bacteria-Vibrio butyricum. In the hydrogenation process of vegetable oil, the trans isomer is produced in the presence of metal catalysts. Under high cooking conditions (150° or higher) oleic acid isomerizes to form elaidic acid.
TFA increases total cholesterol (TC) and low-density lipoprotein-cholesterol (LDL-C) levels and decreases HDL-C levels. 9t-C18:1 has also been shown to induce apoptosis in endothelial cells and human hepatocellular carcinoma cells.
