About Allylglucosinolate (Sinigrin)

The chemical name of sinigrin is allyl glucosinolate or 2-propenyl glucosinolate.

Sinigrin is a major glucosinolate, found in some Brassica plants, such as Brassica nigra, Brussels sprouts and broccoli seeds.

Allylglucosinolate (sinigrin) is the precursor of allyl isothiocyanate. Whenever plant tissues containing myrosin are crushed or otherwise damaged, myrosinase degrades myrosin into mustard oil (allyl isothiocyanate), which is the reason for the spicy taste of mustard and horseradish.

The metabolic activation of Sinigrin leads to the formation of isothiocyanates, which have a variety of therapeutic activities, such as anti-cancer, anti-inflammatory, antibacterial, anti-fungal, anti-oxidation, wound healing, and biological fumigation.

It is also used as a nutritional supplement, because it has preventive and medicinal value for various diseases.

Its molecular formula is C10H16KNO9S2, and its CAS number is 3952-98-5.
